Get out of the meatloaf doldrums! This Banana Meatloaf recipe from 1941 is sure to surprise your taste buds. Spare bananas? Skip the bread and make meatloaf.
The original recipe calls for green bananas. We used bananas heading towards ripe with just a little green on the tips. Not so easy to mash, but not as sweet as fully ripe bananas.
Except for the banana twist this is a basic meatloaf recipe with limited seasoning: mustard powder, salt, and pepper. For a little lift try adding 1 Tbs. paprika or jerk seasoning. For a little heat add 1 tsp of cayenne pepper powder.
Banana Meatloaf - 1941
Ingredients
- 1 lb Ground Beef
- 1 cup Bread Crumbs
- 1 Tbs Finely Chopped Onion
- 3/4 cup Mashed Bananas (Approx. 2-3 small bananas)
- 1 tsp Dry Mustard
- 1 tsp Salt
- ½ tsp Ground Pepper
Instructions
- Preheat oven to 350°. Grease a large loaf pan or two small loaf pans.
- In a large bowl combine all ingredients, working together until thoughtfully combined.
- Pat into a loaf pan and place in oven on center rack.
- Bake 60-70 minutes or until cooked through.
Serving Suggestions
+ Glaze hot meatloaf with ketchup or you favorite BBQ sauce before serving
+ Serve with mash potatoes or creamy grits
