Baked Ham and Rice Casserole -1965
Sweet and savory ham and rice casserole with green peppers and apricots.
Ingredients
- 2 cups Cooked Rice
- 3 cups Cooked Ham (chopped)
- 1 cup Dried Apricots (diced)
- ¼ cup Honey
- ¼ cup Butter (melted)
- ⅓ cup Green Pepper (diced)
- 2 Tbsps Soy Sauce
- 1 tsp Yellow Mustard
Instructions
- Lightly grease 2-quart casserole dish and set aside. Preheat oven to 350℉.
- In a large mixing bowl, whisk together honey, butter, soy sauce, green pepper, and mustard.
- Add remaining ingredients and toss gently until mixed. Pour mix into prepared casserole dish.
- Bake in preheated oven for 1 hour. Serve hot.
