Baked Ham and Rice Casserole -1965

Sweet and savory ham and rice casserole with green peppers and apricots.

Ingredients

  • 2 cups Cooked Rice
  • 3 cups Cooked Ham (chopped)
  • 1 cup Dried Apricots (diced)
  • ¼ cup Honey
  • ¼ cup Butter (melted)
  • cup Green Pepper (diced)
  • 2 Tbsps Soy Sauce
  • 1 tsp Yellow Mustard

Instructions 

  • Lightly grease 2-quart casserole dish and set aside. Preheat oven to 350℉.
  • In a large mixing bowl, whisk together honey, butter, soy sauce, green pepper, and mustard.
  • Add remaining ingredients and toss gently until mixed. Pour mix into prepared casserole dish.
  • Bake in preheated oven for 1 hour. Serve hot.
